What is an Agave Spirit and Why Matador is Different

Agave spirits have been enjoyed for centuries in Mexico, with tequila being the most famous expression. But did you know that tequila is only one type of agave spirit? In fact, not every agave-based drink can legally be called tequila.

So, what’s the difference?

-Tequila: To carry the name, tequila must be made in specific regions of Mexico (mostly Jalisco) and follow strict production regulations. It can only use Blue Weber agave, and the process is tightly controlled by Mexican law.

-Agave Spirit: When agave is distilled outside of these designated Mexican regions, it cannot legally be labeled as tequila. Instead, it’s called an agave spirit. This allows more freedom in production style, while still respecting the tradition of distilling from agave plants.

At Muchacha Brewing Co., we created Matador Agave Spirit here in Australia. It’s not tequila by name, but it’s built with the same passion and roots in Mexican tradition. We use Mexican agave, distilled locally, and give it our own Australian touch.
